Serving Prosecco Properly

Prosecco does not ask for much. It is a generous, easygoing wine. But a few small habits separate a good pour from a great one, and none of them take effort. Here is how we serve it at the house.
Start cold, not frozen
Prosecco is at its best between 6 and 8 degrees. About three hours in the fridge gets you there. Resist the freezer overnight - it deadens the aromatics and, forgotten, it will cost you the bottle.
Open quietly
The loud pop is theatre, and it wastes the wine. Hold the cork firmly, tilt the bottle away from your guests, and turn the bottle rather than the cork. A soft sigh means the sparkle stayed where it belongs.
Choose the glass with care
A narrow flute looks the part but pinches the nose of the wine. A tulip shaped glass, wider in the middle and tapered at the rim, gives the aromatics room to breathe while keeping the bubbles lively. If you must choose one set of glasses for sparkling wine, choose tulips.
Pour against the glass
Tilt the glass and pour slowly down its side. You keep more of the mousse and lose less of the fizz to foam. Fill to about two thirds, no further.
Serve within the hour
Prosecco is a wine of freshness. Once opened, it gives its best within the hour, so open bottles as you need them rather than all at once.
What to eat with it
Salty, fried and creamy things are all excellent company. Small chops, suya, fried fish, soft cheeses - the bright acidity and gentle sparkle cut through richness and reset the palate between bites.
